What a beautiful day today – in the 50s! Unfortunately up here in the mountains, the winds were over 20 mph most of the day. But at least I could get outside with the dogs and gave them a good brushing. I’m finally seeing an improvement in Gus.
Jack, for some reason, didn’t want to join us. What self-respecting cat sleeps like this?
I was ready to try running again, so I got on the treadmill and ran a slow 3 miles at an elevation of 4. No pain. Seems funny to be running and checking on pain in my arm!
Do you love granola like I do? But every brand I look at, even the ‘healthy’ ones, have so much sugar. Of course thats what makes them so good. Every once in a while I make my own. This way I can control the sugar and put in whatever I like. It all goes in one bowl and usually I don’t measure – just throw it in the way I like but I will try to give you measurements.
You can use generic brand oatmeal but I find the “old fashioned” works better than the instant.
4 Cups Oatmeal
one egg (beaten)
1 cup Stevia (or sugar, or brown sugar)
2 tsp. vanilla extract
2 tsp. cinnamon (more or less to your taste)
1 Cup chopped nuts of your choice (pecans, walnuts, etc)
1 Cup sugar free syrup (I use Walden Farms – 0 Calories)
Mix all and spread onto cookie sheet. Bake at 375 until lightly browned and crisp.
After cool, add whatever fruit you want: raisins, cranberries, coconut, etc.
I dread this time of year every year. Tax time. This is what my table looks like tonight.
